I have begun to read over the fundamentals of rocket engine design and how they work. I have a silly question. would NO5 or NOS work in a rocket engine? Would it help speed the rate of combustion?
No. N2O is a oxidizer, just like the stuff you already use in rocket engines. It gets injected in air breathing engines to increase the amount of oxygen in the volume, so you can inject more fuel and get more power.
In a rocket engine, which uses N2O4 or liquid oxygen and injects it at high pressures, also injecting N2O would actually reduce the effectivity and power of the engine.

It will work as an oxidizer, you still need a fuel... SpaceShip One used NOS as the oxidizer, and a compound mostly rubber based as the fuel. NOS is commonly used for hybrid motors like this.
