It's not UCGO but I did make a couple of DGIV/XR2 payload space station modules a while back (They're pretty bad with lighting on the wrong side etc.:facepalm

With the UCGO I was making a few rough modules not too long ago, they would unpack into either generic config vessels or into UCGO Station vessels

I was planning a node, hab, truss, solar panel, cargo pallet and a core. All except the core would be UCGO, which would be an old fashioned DGIV/XR2 cargo, but contain it's own fuel, engines etc. None of these could be repacked.
I had pretty much finished the node (essentially a UCGO replacement for my old one) which also can be grappled by DGIV and XR2.
Anyway I don't know when I'll have time to actually do this and there are some features (like people consuming 02) that would be better suited to a dll vessel. So yeah this stuff is possible if anyone wants to take a crack at it!
I think it would be sweet if there were unpackable modules that could be programmed so that only 1 would fit inside of a DGIV-2 cargo bay, contrary to the original 4 cargos.
I'm really not sure if that's possible with UCGO, the best I can imagine is a Spacecraft 3 dummy old fashioned cargo DGIV jettisoning a UCGO payload, although it might be better to just jettison your inflated/erected module then.
