Summarized history of Soyuz, found it when I visited NSF and I think it would be a good idea to share here.

Audio in French, but English subtitles are available. Quite informative, especially the part regarding the timeline of the rocket family development.

Super cool video showing 3D scanning of Apollo 11 CM. The 3D model in obj format can be found here under a CC0 license ("do whatever you want"). Hint hint AMSO/NASSP/AAPO/etc. developers.

Sadly no similar models of any other spacecraft cockpits.

Usually a 3D model from scanning is just for show.
That is, it lacks the separate mesh groups (for switches, displays, etc) that you need for interactions.
It's just like using a cockpit Photo for a 2D panel
