Question How i can Slow Down the Spacecraft Pitch Sensibility?

Just use less powerful thrusters. Or increase your mass. As Orbiter just simulates physics threre, that're your only options.
Slowing down the (simulated) time might give you another chance, as your "impulses" would be shorter.
If the vessel does have any configuration settings on the thrusters power, that might be an option as well.

Ah by the way, you did notice the manual[*] hinting about the "10% thrust" option, right?

Note: In combination with [Ctrl], thrusters are engaged at 10% max. thrust for fine
control

This might sound rude but again, as with most of your questions, you need to be more specific:
  • Wich spacecraft
  • Wich hardware you using, joystick or keyboard
  • You mean pitch sensivity when flying in atmosphere (also, here wich altitude and airspeed) or in space.

I am attempting something similar, the joystick is a bit sensitive for my kids with a DG in orbit, even when fully fueled. I tried finding any .cfg files to adjust max_trust, local Isp, fuel mass etc, but nothing seemed to do the trick. perhaps I don' t know what I am looking for?
