Have a look through the Orbiter manual. That'll answer a lot of your questions. Also, you can get tons of addons at www.orbithangar.com including OrbiterSound that will put sound into Orbiter. There are tons of tutorials and tons of questions already answered if you use the search feature on the forum

Well, technically OrbiterSound comes from Dan's Orbiter Page, where you can also get the DG-IV, UMMU and UCGO.
Another good one is Altea Aerospace with its XR series.
