TransX Having trouble with escape plan from Earth

After I've made my eject plan (stage 02), there is no "green ellipse" to align the white line with (in the escape plan, stage 01) to help me take off at a 90 degree azimuth.

Instead, it looks like this:

The gray filled in part only disappears if I reset all the variables in the stage 02 plan. In the video, he still has his eject plan variables, but there is no gray filled in part. What does Ej orientation do (the thing he's changing at about 3-4 minutes into the video)? How can I launch at a 90 degree heading without guesswork?

Why do you have to keep the white line with the green ellipse, anyway? How do you really plan a trip to Mars?

[This is all pre-takeoff, by the way.]

EDIT: Oh, the green ellipse is your orbit (in this case, while you're on the ground)
