How do I edit the launch file to fly Apollo 12, 15, 16, and 17?

Why would you want to edit them?
From what i recall there are already some scenarios for later missions.

Yes, there are scenarios for all manned Apollo missions. You can find them under Scenarios/Project Apollo - NASSP/WIP Scenarios/. There is no MCC and Checklist MFD support for those missions though, so you need to find checklists from the Internet and use the RTCC MFD for all calculations the MCC feature usually does automatically.
