I think you need to manually pitch to get the RInc down.
You can't do it. AP locks all the rotational control until the orbit insertion is complete

SpaceX launch vehicles and Dragon

It is the latest version, but I think it has the same problem. Also it's hard to say when to launch since ISS orbit in that addon is totally different than in previous, thus you can't say when to launch, again making it hard to get the Rlnc down to 0

Maybe you are mistaken by the fact that in some scenarios the Orbit MFD is set with ecliptic frame. It displays ISS with 76 deg Inc, if you set equatorial frame it shows ISS at 51.56 deg Inc.
Just tried it and the automated launch put me at 0.08 deg RInc, so there is more than enough fuel to correct.

In Orbit MFD, click FRM to change the inclination from ecliptic frame to equatorial frame.

Hey I also have a Problem with the Dragon.
I docked to the ISS (With the cargo) but I lost my Trunk
without pressing Shift+N. I lost it somwere betwen the brake burn
after cathing up with the ISS and the final docking. Is this a known Problem
?

Ok I now test it again and I realised that Shift+N is the Command for switching between NAV1 and NAV2. So when I switcht to the ISS docking Port is Simply lossing my Payload
