Will the next version of Orbiter have, say, the Pleiades or the Alpha Centauri star system? And if it will, how about a couple of fast things to go with it? Antimatter photon propulsion, anyone? ;)

Sorry but the answer is no to both questions.
 
There are no current plans for that and the next version is not going to have it. If you want an idea of what it'll be like see the Orbiter SDK forum for the latest beta.

Only way to be in a different solar system is to load that system instead of Sol. Check out [ame="http://www.orbithangar.com/searchid.php?ID=2620"]55 Cancri[/ame].

Maybe someone could develop a utility to translate a ship position in one solar system to another to help make the transition feel more real, but the same method would be required.
 
Wow, 55 Cancri looks really great. So does the multiple solar system thing. Too bad the computer with Orbiter on it has a broken fan!
