Problem XR-5 Pitches down during Main Engine Burn

I think I must have done something wrong or perhaps there's a weird configuration setting on my XR-5 that's crept in that's causing issues... but when I try to do a main engine burn when using the Normal or Anti-Normal Autopilot Hold for changing planes, the nose drifts downward when engaging main engines to change planes. This of course effects my orbit in ways I do not like.

This seems most noticeable in highly eccentric orbits where I like to use a coinciding Apoapsis and ascending/descending node to change planes with as little dV as possible.

Is this just a "feature", or law of physics concerning low velocity main engine burn in orbit that over-powers autopilot's ability to keep up orientation or is there a CG setting I need to configure correctly? Or, do I just need to dig my joystick out and fly these kind of burns manually?
