European Vacation

Tomorrow night I board a plane heading to Rome. I've spent a considerable amount of time in Europe over the last 6 years, but I've never been to Rome, so I'm quite excited about that.
After a few days, my girlfriend and I are driving up to Tuscany for a relaxing stay at a remote B&B.

Then we drive back to Rome to catch a flight heading to Amsterdam (I've been there many times before). Since we have such a global community here, I was wondering what are some things that I shouldn't miss, especially things off of the beaten path in each of these places. Particularly interesting to me would be great small museums dedicated to history, science and technology.

    Hope you arrived OK! I've only been to Rome once, for a wedding. It was only a weekend, so I know nothing about what there is to do. Same goes for Amsterdam. These places are close to me, but I've never seen them.
